The Mitarte Crianza La Secreta is an intense and elegant wine made entirely with the Tempranillo variety from vineyards over 40 years old in Labastida, in the Rioja Alavesa. From manual harvesting during the second fortnight of October and aged for 12 months in new French 30% and American 70% oak barrels. It is an ideal wine for Iberian hams and sausages, red meats, hunting and roasts.

HARVEST: Manual harvest at the end of October and beginning of November
VINIFICATION: Traditional fermentation at 25°C for 8 days. The maceration is prolonged for 3 days after fermentation
AGING: Aging for 12 months in new French oak barrels 30% and American 70%
BOTTLING: Once bottled, it is aged for a minimum of 6 months more in a bottle rack with controlled temperature and humidity
